Happy Easter, all! I hope it was wonderful for you and a great time of reflection on the meaning of resurrection day.
Joe and I hosted his parents for brunch after church, and I have to say that it was a stellar food day. I realized that I probably won't be up for cooking for the next month or so because of a new baby life, so I squeezed in some creativity today. I tried my hand at a fritatta (my first--thanks for the tips, Karen!) with grilled asparagus, potato, onion and tomato. Yum! I was really pleased with the way it came out. I also made broiled grapefruit for the first time and it was another winner. Imagine chilled pink grapefruit coated in brown sugar, cinnamon and butter and then broiled for a couple of minutes in the oven; sweet, crackly goodness on top of cool fruit. Oh, my.
And I admit it. I ate a small chocolate bunny. Don't tell my endocrinologist.
